    This pan is aging/seasoning well, and it cooks fairly evenly across the cooking surface— no hot spots.

    I believe I am treating my cast iron correctly. It's still a work in progress but I think it's not there yet. Too many years with correctly seasoning the pan. Not sure how much to use after each use.
