My sister in law swore by her iron skillet 20 years ago. With all the contaminants and health concerns with cookware, we started researching the best non-toxic cookware. Iron skillets kept coming up. I had always figured they were difficult to cook with and even more difficult to maintain. I cannot speak for other manufacterers, but Field Company has got to be the BEST. Cooking has never been easier. I never imagined iron skillets to be "non-stick", but if you follow the directions even eggs don't stick. Cleanup is super easy and maintenance is not as bad as I imagined. It is the ONLY cookware we use now and I will be buying more sizes.
