Prep your turkey according to your favorite recipe (we like a dry brine and an unstuffed turkey when cooking in cast iron).

Preheat your Field Skillet in the oven for
20 minutes. This will cook the bottom more efficiently and evenly with the top.

Place the turkey in your skillet and avoid crowding the pan with extras. Bonus: long roasting times are great for seasoning your pan.
4.
Use the juices collected in the pan for your gravy and deglaze any fond (caramelized bits) to include for extra flavor.
5.
After carving the bird, put the pieces back into a warm skillet, and take directly to the table for serving.
