How to Make Chorizo Queso Fundido in a No.4 Field Skillet

Preheat oven to 350 °F.

Cook the chorizo: Heat a No.4 Field Cast Iron Skillet over medium heat. Add chorizo (and vegetable oil if needed) and cook, breaking it up into crumbles, for 6-7 minutes until fragrant and browned.

Sauté the aromatics: Remove the chorizo from the skillet and set aside. On the same skillet add onion, garlic, and green chiles with a pinch of salt, cooking until softened (about 5 minutes).

Layer the cheese: Add most of the cooked chorizo back to the skillet.  Top it with shredded cheeses and milk, and mix gently before spreading it evenly in the skillet.

Bake until bubbly: Transfer the skillet to the oven and bake for 10-12 minutes, until the cheese is fully melted and just starting to brown on top.

Broil for a golden crust: Increase the oven temperature to 425°F and bake for 5 more minutes until the top is golden and bubbling.

Garnish & serve: Remove from the oven and top with reserved chorizo, sliced avocado, and fresh cilantro. Serve immediately with warm tortillas, tortilla chips, and roasted salsa.
