We’ve been using the same Sabatier chef’s knife for about two years, and it’s still nice and sharp. The carbon steel blade has excellent weight and balance, and its bolster feels like it was custom-shaped for our hands. We especially love how the blade develops a protective patina over time—much like a cast iron skillet develops its layers of seasoning. And the 8-inch size is just the right size—neither too big nor small—for tackling all of your cutting needs, from food prep through carving roasts and other large-format meats.
